Katie Hollingshead is the operations manager at Donkey Tales Cantina, which opened in Draper in 2003. The club -- Draper's first and only one -- is attached to Guadalahonkys Mexican Restaurant. Hollingshead's parents opened Guadalohonkys in 1988, and also own Donkey Tails Cantina.

How did you get into this line of work?

I grew-up in the restaurant business. I started working at Guadalahonkys bussing tables as soon as I was old enough to work, and have worked here on and off ever since. About five years ago, I started working behind the scenes doing whatever my dad needed me to do, which landed me in my current position. The managers and other employees are the face -- we wouldn't be where we are without them -- but I along with my parents and our accountant are what makes it possible for those employees to have a job.

How would you describe Donkey Tails Cantina?

DTC is unlike any other bar/club, it is small, but intimate; you get to know everyone really quick. Newly remodeled & expanded! We have five flat screen TVs and an awesome patio equipped with a heater and fire pit.

So your parents opened Guadalahonkys?

Yep, it was one of the first restaurants in Draper! Surrounded by fields and cows, everyone said they were crazy and no one would come. Boy were they wrong! We had lines out the door of people waiting to get in!

What is the best thing, and worst thing, about being a manager?

Best: I love being busy and learning the ins and outs of the business. PS: I love my job! Worst: Conflicts between employees. I hate it, but it comes with the job.

What's your favorite Donkey Tails drink?

Shazel (vodka, peach schnaaps, Alize, Hypnotiq, and our special juice mixture) made up by one of our favorite bartenders.

What kind of people would love Donkey Tails?

We cater to everyone! 21 and up. You can walk in at any time and the bar will be filled with people of all ages hanging out with each other. It's kind of the cheers atmosphere "where everyone knows your name." The customers come in to drink but many come in for the food, also (you can order off the Guad's menu). You can come eat, drink, watch the game or just hang out with good people. When you're at DTC, you're in good company!

Tell us your favorite story about your bar.

Tears for Tearni Ride and Fundraiser on October 10, 2009. We recently had a bartender/ family member critically injured, on life support, not expected to live, with an 18-month-old boy. We did a charity Harley ride, a raffle and silent auction to raise money for her and the bartenders donated a portion of their tips to the fund (Tips for Tearni). We had an awesome turn out. We raised over $6000 for her and her son. It was a very emotional and gratifying day!

What else would you like our readers to know?

DTC and Guadalahonkys is a family, owned by a family and functions as a family.
